Ingredients
For the Slawsa:
- 1/4 cup mayo
- 1/4 cup Greek yogurt
- 2 tbsp honey
- Juice from 1/2 lime
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 16 oz shredded cabbage
- 1 SugarBeeĀ® apple, cut into matchsticks
- 1 cup finely chopped cilantro

For the Quesadillas:
- Large flour or corn tortillas
- Thinly sliced SugarBee apple
- Sharp white cheddar (or regular sharp cheddar), shredded or sliced
- Honey mustard (for drizzling)
- Thinly sliced deli ham (optional, but encouraged)
- Butter or oil, for grilling

Instructions

- Make the Slawsa:
In a small bowl, whisk together the mayo, Greek yogurt, honey, lime juice, Dijon mustard, salt, and pepper.
In a large bowl, combine the cabbage, matchstick apples, and chopped cilantro.
Pour the sauce over the slaw mixture and toss until well coated. Chill while you make the quesadillas. - Assemble the Quesadillas:
