Cinnamon SugarBee® Apple Pocket Pies

Soft, golden, cinnamon-sugar hand pies filled with a warm bourbon vanilla SugarBee® apple filling. These are everything you loved about a sealed sandwich snack but made from scratch and infinitely better. Perfect for busy days, packed schedules, and grabbing on your way out the door, these portable hand pies are made to travel. Whether it’s track meets, a day at the races, road trips, or a quick snack between stops.


Ingredients

Apple Filling

  • 3 large SugarBee apples, grated
  • 1 tbsp lemon juice
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/8 cup cornstarch
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp bourbon vanilla paste
  • Pinch of salt
  • 1 cup water

Hand Pies

  • 1 loaf soft bread (potato or buttermilk)
  • Avocado oil spray or melted butter
  • Cinnamon sugar or vanilla sugar, for topping

Instructions

 

  1. Make the Apple Filling
    In a saucepan over medium heat, combine grated SugarBee apples, lemon juice, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, vanilla paste, salt, and water. Cook, stirring frequently, until the mixture thickens into a glossy, jammy apple pie filling (about 8–10 minutes). Remove from heat and allow to cool completely.
  2. Assemble the Hand Pies
    Lay out your bread slices. Using half the loaf, add about 1/4 cup of cooled apple filling to one side of each slice, leaving a small border. Top with remaining slices and seal using a sandwich cutter.

  1. Finish & Cook
    Lightly spray tops with avocado oil or brush with melted butter. Sprinkle with cinnamon sugar or vanilla sugar. Air fry at 400°F for 10 minutes until golden.
  2. Cool & Pack
    Allow to cool slightly before handling. Pack into a cooler or tote bag for a perfect grab-and-go snack.
