SugarBee Snack-a-dilla

SugarBee Snack-a-dilla

  • Author: @whosagoodlizard

Description

This quesadilla is a golden, cheesy dream with a sweet twist, thanks to the star of the show, SugarBee apples. Their natural honeyed sweetness and crisp bite pair perfectly with sharp cheddar and savory ham, creating a craveable contrast in every melt-in-your-mouth bite. Tucked between warm tortillas and finished with a honey mustard drizzle, it’s grilled to perfection and served alongside a vibrant, creamy slawsa, made with matchstick SugarBee apples for added crunch and brightness. Whether you’re hosting brunch or just upgrading lunch, this dish is sweet, savory, and unapologetically all about the SugarBee.

Ingredients

Scale

For the Slawsa:

1/4 cup mayo

1/4 cup Greek yogurt

2 tbsp honey

Juice from 1/2 lime

1 tsp Dijon mustard

1/2 tsp salt

1/2 tsp black pepper

16 oz shredded cabbage

1 SugarBee® apple, cut into matchsticks

1 cup finely chopped cilantro

For the Quesadillas:

Large flour or corn tortillas

Thinly sliced SugarBee apple

Sharp white cheddar (or regular sharp cheddar), shredded or sliced

Honey mustard (for drizzling)

Thinly sliced deli ham (optional, but encouraged)

Butter or oil, for grilling

Instructions

In a small bowl, whisk together the mayo, Greek yogurt, honey, lime juice, Dijon mustard, salt, and pepper.
In a large bowl, combine the cabbage, matchstick apples, and chopped cilantro.
Pour the sauce over the slaw mixture and toss until well coated. Chill while you make the quesadillas.

Lay out one tortilla and layer with shredded cheese, thin SugarBee apple slices, ham (if using), and a light drizzle of honey mustard. Top with more cheese and the second tortilla (or fold over, if using a single large tortilla).

Heat a skillet or griddle over medium heat. Add a little butter or oil and cook each quesadilla until golden and crispy, flipping once—about 2–3 minutes per side.

Slice into wedges and serve hot with a generous scoop of chilled SugarBee Slawsa on the side.
