Cast-Iron Deep Dish SugarBee® Apple & Beecher’s Cheese Pizza

Sweet, crisp SugarBee® apples bring a naturally honeyed balance to this cast-iron deep-dish pizza, pairing beautifully with Beecher’s Flagship Cheese, known for its bold, sharp complexity, and Beecher’s Dulcet Cheese, a creamy, gently sweet cheese that softens and rounds every bite. The combination of savory bacon, fresh thyme, a touch of heat from red pepper flakes, and a finishing drizzle of Mike’s Hot Honey creates a layered sweet-savory contrast that feels indulgent yet familiar. Baked entirely in the oven until bubbling and caramelized, this pizza is cozy, rich, and perfect for sharing.

Ingredients:

  • 1 package premade pizza dough (I like to get mine at Trader Joe’s)
  • Olive oil
  • 1 SugarBee® apple, thinly sliced
  • 1 (6 oz) package Beecher’s Flagship cheese, shredded
  • 1 (6 oz) package Beecher’s dulcet cheese, shredded
  • 8 strips bacon, chopped, cooked until crisp, drained
  • 1 heaping tablespoon stone-ground mustard
  • Fresh thyme leaves
  • Fresh cracked black pepper
  • Red pepper flakes
  • Mike’s Hot Honey, for finishing

Instructions:

  1. Preheat the oven to 475°F.
  2. Lightly coat a cast-iron skillet with olive oil. Press the pizza dough into the skillet, gently pushing it up the sides.
  3. Par-bake the dough in the oven for 15 minutes, until set and lightly golden.
  4. Carefully remove from the oven and flip the dough upside down so the baked side is facing up. Spread a heaping tablespoon of stone-ground mustard evenly over the surface.
  5. Add a layer of Beecher’s Flagship and dulcet cheeses, followed by crispy bacon and SugarBee® apple slices. Repeat with another layer of cheese and apples.
  6. Finish with fresh thyme leaves, fresh cracked black pepper, and a pinch (or more) of red pepper flakes.
  7. Return to the oven and bake for 10–15 minutes, until the cheese is melted, bubbling, and the edges are deeply golden.
  8. Switch to broil for 1–2 minutes at the end to lightly caramelize the apples and cheese, watching closely.
  9. Remove from the oven, slice immediately, and finish with a generous drizzle of Mike’s Hot Honey before serving.
