Strawberry Apple Crisp

Summer calls for quick and easy desserts that pack a punch. When fresh strawberries are in season, they’re the perfect pairing with SugarBee Apples for an apple crisp with a twist. Prep a base of diced fruit and sprinkle it with the simple crisp topping. After 45 minutes in the oven, you’ll have a wonderfully juicy, buttery dessert to top off with whipped cream or ice cream. Serve it after an alfresco dinner or take it to share with family or friends at a backyard barbecue or potluck.

Ingredients

For the base:

  • 1 pound fresh strawberries, de-stemmed and diced
  • 2 SugarBee Apples, cored and diced
  • 1/4 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon water

For the topping:

  • 1 cup all-purpose flour
  • 2/3 cup rolled oats
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt 
  • 8 tablespoons unsalted butter, melted 

Instructions

  1. Preheat the oven to 350 degrees. Grease an 8×8 baking dish. 
  2. In a large bowl, add the diced strawberries, diced apples, brown sugar, flour, and water. Stir to combine and transfer to the prepared baking dish.
  3. In a medium bowl, combine the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and combine with a fork until clumps form. Evenly distribute the topping over the fruit.
  4. Bake the strawberry apple crisp for 45 minutes until bubbly and golden on top. 
  5. Serve warm with ice cream or whipped cream.
