SugarBee Apple Quinoa Salad

When the warm weather hits, nothing beats digging into a refreshing meal alfresco. Prep this quick and easy quinoa salad ahead of time to serve for summer dinners outside or to take with you to a potluck or barbecue. It’s packed with vibrant flavor from SugarBee® apples paired with blueberries, arugula, and a simple homemade dressing. 

Prep time: 15 minutes 

Serving size: Makes 6 servings 

Ingredients

For the dressing:

  • 6 tablespoons olive oil 
  • 2 cloves garlic, minced
  • ½ of one medium lemon, zested and juiced
  • 2 tablespoons honey
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper
  • For the salad: 
  • 3 cups arugula
  • 1 1/2 cups cooked quinoa
  • 1 SugarBee apple, diced
  • 1 cup blueberries
  • 1/4 cup crumbled feta cheese 

Instructions

  1. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, honey, salt, and pepper. 
  2. In a large bowl, add the arugula, cooked quinoa, diced apple, and blueberries. Pour the dressing over the salad and toss to combine.
  3. Garnish the top with crumbled feta cheese and additional diced apples and blueberries.
