SugarBee Apple Quinoa Salad
When the warm weather hits, nothing beats digging into a refreshing meal alfresco. Prep this quick and easy quinoa salad ahead of time to serve for summer dinners outside or to take with you to a potluck or barbecue. It’s packed with vibrant flavor from SugarBee® apples paired with blueberries, arugula, and a simple homemade dressing.

Serving size: Makes 6 servings
Ingredients
For the dressing:
- 6 tablespoons olive oil
- 2 cloves garlic, minced
- ½ of one medium lemon, zested and juiced
- 2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the salad:
- 3 cups arugula
- 1 1/2 cups cooked quinoa
- 1 SugarBee apple, diced
- 1 cup blueberries
- 1/4 cup crumbled feta cheese

Instructions
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, honey, salt, and pepper.
- In a large bowl, add the arugula, cooked quinoa, diced apple, and blueberries. Pour the dressing over the salad and toss to combine.
- Garnish the top with crumbled feta cheese and additional diced apples and blueberries.
