SugarBee® Apple Banana Bread
Prep Time: 15 minutes
Cook Time: 55 minutes
Yield: 12 servings
Ingredients:
-
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon kosher salt
- 1/2 cup avocado oil
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 4 overripe bananas, mashed (approx. 2 cups)
- 1 cup chopped SugarBee Apples coated in 2 tablespoons flour + ¼ teaspoon cinnamon
- For serving (optional): butter and honey
Instructions:
- Prep: Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper or lightly grease it with butter or oil.
- Whisk the dry ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- Chop the apples: Chop the apples into small pieces, and coat in flour and cinnamon.
- Mash the bananas: In a separate medium bowl, peel and mash the bananas until mostly smooth.
- Mix the wet ingredients: In a large bowl, whisk together the oil and sugar until well combined. Add the eggs, vanilla extract, and mashed bananas. Mix until smooth.
- Combine: Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix. Gently fold in the chopped apples.
- Bake: Pour the batter into the prepared loaf pan. Bake for 30 minutes, then cover the loaf with aluminum foil to prevent over-browning. Continue baking for another 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
- Cool: Let the banana bread cool in the pan for 10–15 minutes before transferring it to a wire rack to cool completely. Slice and top with butter and honey. Enjoy!
