Whipped Vegan Feta with SugarBee® Apple & Agave Topping
Ingredients
Whipped Vegan Feta:
- 1 cup vegan feta cheese
- 2 tbsp vegan Greek yogurt
- 1 tbsp olive oil
- 1 tsp lemon juice
- ½ tsp garlic powder
- Pinch of salt
SugarBee Apple and Agave Topping:
- 1 large SugarBee apple, diced
- ¼ cup red onion, finely diced
- 2 tbsp olive oil
- 1 tbsp agave syrup
- ½ tsp ground cinnamon
- ¼ cup pecans, roughly chopped
- 1 tsp fresh thyme leaves
- ½ tsp chopped fresh sage
- Pinch of salt
Instructions
- Prepare the Whipped Vegan Feta:
- In a blender or food processor, combine the vegan feta cheese, vegan Greek yogurt, olive oil, lemon juice, garlic powder, and salt.
- Blend until smooth and creamy, scraping down the sides as needed.
- Adjust seasoning to taste and set aside.
- Make the SugarBee Apple and Agave Topping:
- Heat 2 tbsp olive oil in a skillet over medium heat.
- Add the red onion and sauté for 2-3 minutes until softened.
- Stir in the diced SugarBee apple, cinnamon, thyme, sage, and a pinch of salt. Cook for 4-5 minutes until the apples are tender but not mushy.
- Add the chopped pecans and drizzle the agave syrup into the mixture. Cook for another 1-2 minutes to toast the pecans slightly and allow the agave to caramelize lightly. Remove from heat.
- Assemble:
- Spread the whipped vegan feta onto a serving plate or bowl.
- Spoon the warm SugarBee apple and agave topping over the whipped feta.
- Drizzle with a little extra olive oil or agave if desired.
- Serve:
- Serve immediately with crusty bread, crackers, or as a dip for veggies.
