SugbarBee® Apple Cinnamon Roll Monkey Bread

SugarBee® apples with the flavors of honey, caramel and molasses pair perfectly with the warm, gooey layers of cinnamon roll dough in this classic soft, sticky, pull-apart breakfast pastry! This recipe uses pre-made cinnamon roll dough for an easy, next-level twist on this indulgent treat. This monkey bread can be made in a bundt pan, cake pan, or a loaf pan, and can be easily elevated by adding in walnuts or pecans.  

Yield: 6-8 servings 

For the Apples: 

Ingredients: 

  • 3 SugarBee apples, peeled and diced into ¼ inch cubes 
  • Juice from ½ a lemon 
  • 1 teaspoon ground cinnamon 
  • 1 tablespoon granulated sugar 
  • 2 tablespoons butter 

Instructions: 

  1. Preheat oven to 350ºF.  
  2. Grease a bundt pan with baking spray. 
  3. Peel, core, and dice apples into ¼ inch cubes and place in a medium bowl. 
  4. Toss the apples with lemon juice, cinnamon, and sugar. 
  5. In a medium frying pan over medium heat, melt the butter.  
  6. Add the apples to the frying pan and cook until softened, 8-10 minutes.  
  7. Remove from heat. Add a layer of apples, about ½ cup, to prepared bundt pan; set aside.

For the Sauce:

Ingredients: 

  • ½ cup butter 
  • 1/3 cup brown sugar 

Instructions: 

  1. In a small saucepan over medium heat, melt ½ cup butter.  
  2. Add in the brown sugar; stir until sugar is dissolved and mixture is smooth and well combined. 
  3. Remove from heat; set aside while you prepare the monkey bread.  

For the Monkey Bread: 

Ingredients: 

  • ¼ cup granulated sugar 
  • 3 teaspoons ground cinnamon 
  • 3 (12.4 ounce) tubes cinnamon rolls, plus frosting cups 

For the monkey bread: 

  1. In a small bowl, mix the sugar and cinnamon.  
  2. Slice each cinnamon roll in half; roll each half into a ball and add to prepared bundt pan on top of the layer of apples.  
  3. Alternate sprinkling the cinnamon roll dough with cinnamon-sugar mixture and layers of apples, until everything is in the pan.  
  4. Tip: Reserve some apple filling to add on top of the monkey bread after baking, if desired. 
  5. Pour the sauce over everything. 
  6. Bake in preheated oven for 30-35 minutes, until the monkey bread has puffed up about 1 inch and the top is deep brown.  
  7. Let cool for 10 minutes in the pan, then place a large plate over the top of the pan.  
  8. With oven mitts, hold the pan and dinner plate together, then flip over. Carefully remove the bundt pan (give it a few taps if the bread doesn’t seem to be releasing) and let it slide out onto the plate. 
  9. Finish monkey bread by topping with reserved apples and drizzling with reserved cinnamon roll icing. Enjoy immediately!
