SugarBee® Apple Pancakes

These SugarBee® apple pancakes taste just like apple pie and are a great way to use up some extra apples. This vegan breakfast really highlights the hints of caramel, molasses, and honey that pair well with any breakfast food!

Ingredients:

  • 2 SugarBee® apples
  • ¾ cup all-purpose flour
  • ¼ cup bread flour
  • ¼ cup sugar
  • 1 cup vegan milk
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp neutral oil
  • ½ tsp nutmeg
  • ¼ tsp salt

Instructions:

  1. Combine the flour, sugar, baking powder, salt, nutmeg, and cinnamon in a medium bowl, whisking until mixed.
  2. Add the vegan milk, oil, and vanilla extract, whisking gently to combine without overmixing.
  3. Core and slice the apples into rings.
  4. Dip the apple rings into the batter until they’re fully coated.
  5. Preheat a griddle over medium heat, then place the coated apple rings on it.
  6. Cook for about four minutes or until bubbles form across the surface. Flip and cook for an additional 1-2 minutes until cooked through.
  7. Serve your apple rings with sliced fruit or apples, butter, and maple syrup.
