SugarBee® Apple Stuffed Pork Recipe
This SugarBee® apple Stuffed Pork offers a presentation that is perfect for entertaining, yet easy enough for a typical weeknight dinner. The combination of flavors will make this an instant family favorite.
Serves 6.
Ingredients:
- 2 1/2 – 3 lb boneless pork roast or tenderloin
- 1 tbsp dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup panko breadcrumbs
- 1/4 cup chicken stock
- 2 SugarBee® Apples, chopped
- 2 tbsp dried cranberries
- 2 tbsp toasted walnuts, chopped
- 1 tsp fresh rosemary, chopped
Instructions:
- Preheat oven to 325º F.
- Cut the pork down center lengthwise within a half-inch of bottom. Open the tenderloin so it lies flat.
- On each half, make a lengthwise slit down the center to within a half-inch of bottom. Pound to flatten to 1/4-in. thickness. Spread the dijon mustard over the pork and sprinkle with salt and pepper.
- In a large bowl, add the breadcrumbs, chicken stock, apples, cranberries, walnuts and rosemary and stir to combine.
- Spread the stuffing over the tenderloin, leaving a 1-inch border.
- Roll the pork and tie with kitchen string at 2-inch intervals.
- Place the pork in a roasting pan and bake, uncovered, for 40 minutes or until pork reaches an internal temperature of 140º F.
- Let the pork rest for 8 minutes.
- Remove string, slice and serve.
