SugarBee® Apple Stuffed Pork Recipe

This SugarBee® apple Stuffed Pork offers a presentation that is perfect for entertaining, yet easy enough for a typical weeknight dinner. The combination of flavors will make this an instant family favorite.

Serves 6.

Ingredients:

  • 2 1/2 – 3 lb boneless pork roast or tenderloin
  • 1 tbsp dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup panko breadcrumbs
  • 1/4 cup chicken stock
  • 2 SugarBee® Apples, chopped
  • 2 tbsp dried cranberries
  • 2 tbsp toasted walnuts, chopped
  • 1 tsp fresh rosemary, chopped

Instructions:

  1. Preheat oven to 325º F.
  2. Cut the pork down center lengthwise within a half-inch of bottom. Open the tenderloin so it lies flat.
  3. On each half, make a lengthwise slit down the center to within a half-inch of bottom. Pound to flatten to 1/4-in. thickness. Spread the dijon mustard over the pork and sprinkle with salt and pepper.
  4. In a large bowl, add the breadcrumbs, chicken stock, apples, cranberries, walnuts and rosemary and stir to combine.
  5. Spread the stuffing over the tenderloin, leaving a 1-inch border.
  6. Roll the pork and tie with kitchen string at 2-inch intervals.
  7. Place the pork in a roasting pan and bake, uncovered, for 40 minutes or until pork reaches an internal temperature of 140º F.
  8. Let the pork rest for 8 minutes.
  9. Remove string, slice and serve.
