Puff Pastry Apple Pop Tarts with Honey Glaze

Yield: 8 Pop Tarts
For the Filling:
- 2 medium SugarBee apples, peeled, cored, and finely diced
- 2 tablespoons unsalted butter
- 1/4 cup packed light brown sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 2 teaspoons cornstarch + 2 teaspoons water
For the Pop Tarts:
- 2 sheets frozen puff pastry, thawed
- 1 egg
- 1 tablespoon milk
For the Glaze:
- 1 cup powdered sugar
- 1/2 tablespoon honey
- 2 tablespoons milk (adjust for consistency)
- 1/4 teaspoon vanilla extract
- Dash of cinnamon
- Optional: sprinkle of cinnamon sugar for topping
Instructions
1. Make the Apple Filling: In a medium skillet or saucepan, melt the butter over medium heat. Add diced SugarBee apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir to coat. Cook for 5–6 minutes, stirring occasionally, until the apples begin to soften. In a small bowl, whisk together the cornstarch and water. Stir in the cornstarch slurry and cook 1–2 more minutes, until thickened. Remove from heat and let cool completely.
2. Prep the Oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper.
3. Assemble the Pop Tarts: Roll out puff pastry on a lightly floured surface into a 10×12-inch rectangle. Cut into 8 equal rectangles. Place half the rectangles on the prepared baking sheet. Spoon 2–3 tbsp of the cooled apple filling into the center of each, leaving a 1/2-inch border.
- Seal the Edges: Whisk together the egg and milk in a small bowl. Using a pastry brush, brush the edges of the pop tarts with egg wash. Place the remaining pastry rectangles on top. Use a fork to press and seal the edges. Brush the tops with more egg wash. Use a fork to prick a few small holes in the top for steam to escape.
- Bake: Bake for 15-18 minutes, or until puffed and golden brown. Let cool on the sheet for 5 minutes, then transfer to a wire rack.
- Glaze and Serve: In a small bowl, whisk powdered sugar, honey, milk, vanilla, and cinnamon until smooth. Drizzle or spread over cooled pop tarts. Sprinkle lightly with cinnamon sugar, if desired.
