SugarBee® Apple & Beecher’s Cheese Porchetta: Brought to you by 1908 BBQ & Bourbon

We here at SugarBee® are so excited to be working with the world famous Washington based cheese maker, Beecher’s Cheese! This special recipe uses Beecher’s special Reserve Cheese that is made only on days when the milk composition is just right. The last curds on the table from these makes are used to produce Flagship Reserve truckles as it allows for slightly lower moisture, higher salt content and thus a richer taste and texture while maintaining a clean, creamy finish. A big thanks to 1908 BBQ & Bourbon in Twisp and Chef Tyler for perfecting the vision and bringing this recipe to life.

This Porchetta Roast is one of our favorite meat dishes, with enough flavor to be enjoyed on its own or served with sides. This big, delicious dish is the perfect way to entertain guests this barbecue season. Using the perfect combination of meat, herbs, spices, and the best roasting pan, this simple Porchetta recipe is always a success.

Ingredients:

  • 1 Pork belly
  • 1 SugarBee® apple
  • 1 Fennel bulb
  • 1/4 cup Porchetta Rub
  • 1lb Beccher’s Reserve

Porchetta Rub Dry Ingredients:

  • 2 tbsp Garlic Powder
  • 2 tbsp Onion Powder
  • 2 tbsp Ground Fennel
  • 2 tbsp Ground Rosemary
  • 2 tbsp Ground Sage
  • 2 tbsp Ground Thyme 
  • 2 tbsp Granulated Sugar
  • 2 tbsp Kosher Salt

Cooking Instructions:

  1. Shave SugarBee® apples and Fennel
  2. Butterfly Pork Belly
  3. Rub pork belly with Porchetta – spread evenly
  4. Shingle SugarBee® apples, Fennel and Beecher’s Cheese
  5. Roll Pork Belly & tie
  6. Smoke or bake at 250% until reaches internal temperature of 180%
  7. Slice into individual rings
  8. Place a slice of Beechers on each roll
  9. Return to smoker for half an hour
