SugarBee® Apple Summer Salad

Ingredients: Salad
- ¼ cup walnuts, toasted
- Olive oil
- 1 large shallot, sliced lengthwise
- 2 heads soft lettuce, Butter Lettuce or similar
- 1 handful arugula
- 1 SugarBee® apple, sliced or diced
- 1/3 cup gorgonzola or blue cheese, crumbled
- ½ cup fresh blackberries
Ingredients: Apple Cider Vinaigrette
- 2 teaspoons grainy mustard
- 2 teaspoons apple cider vinegar
- ½ teaspoon honey
- 1 tablespoon extra-virgin olive oil
- Salt & pepper
Directions
- Toast walnuts: preheat oven to 425ºF; toast until golden and fragrant, about 6-10 minutes.
- Caramelize shallots: In a small pan over medium heat, add olive oil and sliced shallots. Sautee
until caramelized, 8-10 minutes. Remove from heat and set aside. - Make the dressing: in a medium bowl, whisk together all ingredients, until fully combined.
- Assemble: in a large bowl, add the lettuce and arugula; toss the leaves with the dressing. Add
walnuts, shallots, apples, gorgonzola, and blackberries; give a quick toss to incorporate
everything evenly. Enjoy!
