Maple Apple Scones

Nothing beats a simple breakfast sweet, but it can be made that much better with a few extra hearty ingredients. This easy scone recipe incorporates oats and chopped SugarBee apples for a breakfast or afternoon treat packed with rich texture and flavor featuring notes of molasses, caramel, and honey with a touch of maple.

Ingredients

For the scones:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter, cold
  • 2 eggs
  • 3 tablespoons milk
  • 1 SugarBee apple, thinly chopped

For the glaze:

  • 1 1/4 cups powdered sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons milk

Instructions

  1. Whisk together the flour, oats, brown sugar, baking powder, and salt in a large mixing bowl.
  2. Using a cheese grater, grate the butter into the dry mixture. Mix with a fork or your hands until the butter is incorporated.
  3. Mix in the eggs and milk. Transfer the mixture onto a well-floured countertop.
  4. Using your hands, knead and fold the dough multiple times. Fold the apples into the dough in three parts. Form the dough into a round and cut into 8 individual scones.
  5. Place the scones on a plate with a piece of parchment paper. Chill the scones in the fridge for 20 minutes while preheating the oven to 350 degrees.
  6. Transfer the parchment paper and scones to a baking sheet. Bake the scones for 25 minutes until lightly golden brown. Once baked, allow to cool. 
  7. To make the glaze, whisk together the powdered sugar, maple syrup, and milk. Drizzle the glaze over the cooled scones.
