SugarBee® apple Blueberry Crisp

These individual apple blueberry crisps made with SugarBee® apples are the perfect easy summer treat!
Each ramekin is filled with fresh SugarBee® apples, juicy blueberries, and an irresistible brown sugar oat
crumble topping. The notes of honey, caramel, and molasses flavors in the apples tie this whole dessert
together and pair beautifully with a scoop of vanilla ice cream!

 

Yield: 5 servings
Ingredients:
For the oat crumble topping:
– 60 (½ cup) all-purpose flour
– 66g (½ cup) old fashioned rolled oats
– 106g (½ cup) brown sugar
– ½ tsp cinnamon
– ¼ tsp salt
– 56g (4 tbsp) unsalted butter, room temp + cubed

For the apple blueberry filling:
– 2 SugarBee® apples, cut into small pieces
– 15 oz fresh blueberries
– 50g (¼ cup) granulated sugar
– 8g (1 tbsp) cornstarch
– ¼ tsp salt
– 12g (1 tbsp) lemon juice
– 1 tsp vanilla extract

Instructions:
For the oat crumble topping:
1. Preheat the oven to 350 degrees F.
2. In a medium bowl, combine the flour, oats, brown sugar, cinnamon, and salt.
3. Add the cubed butter and toss to coat. Rub the mixture between your fingers until it resembles
wet sand and there are no visible pieces of butter left.
4. Cover the bowl and place in the fridge until ready to use.
For the apple blueberry filling:
1. In a large bowl, combine the apples, blueberries, sugar, cornstarch, salt, lemon juice, and vanilla.
For assembly:

1. Divide the apple blueberry filling between 5 ramekins.
2. Top each with a generous amount of the oat crumble.
3. Place the ramekins on a baking sheet, and bake the crisps for about 35-40 minutes or until the
juices are bubbling over.
4. Allow the crisps to cool for a few minutes, then top each with vanilla ice cream and enjoy!
