SugarBee® apple Spice Cake

This cake is full of sweet SugarBee® Apples, walnuts, and all the fall spices, then topped with a cinnamon cream cheese frosting. The honey, caramel, and molasses notes in SugarBee Apples perfectly match this cake’s Fall spices!

 

For the cake:

2 cups  all-purpose flour

¾ cup brown sugar

2 large eggs

2 cups unsweetened applesauce

¾ cup canolal oil

2 tsp vanilla

2 ½ tsp ground cinnamon

½ tsp ground clove

¼ ground nutmeg

1 ½ tsp allspice

2 SugarBee apples, roughly chopped 

2 cups chopped walnuts 

1 teaspoon kosher salt 

1 teaspoon baking powder

1 teaspoon baking soda

 

For The Frosting:

8 ounces cream cheese

¼ cup unsalted butter

2 cups powdered sugar

1 tsp vanilla 

2 ½ tsp cinnamon

 

Instructions:

  1. Preheat the oven to 350 degrees and grease a 9×13 pan. 
  2. Wisk the brown sugar and the eggs until light and foamy.
  3. Mix in the apple sauce, oil, spices, and vanilla. 
  4. Mix in the flour, salt, baking powder, and baking soda. Mix until there are no streaks of flour left. 
  5. Fold in the SugarBee apples and walnuts. 
  6. Add to the prepared pan and bake for 30-40 minutes. 
  7. Let the cake cool to room temperature. 
  8. Make the icing by mixing the cream cheese and butter together. Then mix in the vanilla, cinnamon, and sugar until well combined.
