SugarBee® Apple Banana Bread

Yield: 12 servings

 

Ingredients:

    • 2 cups all-purpose flour
    • 2 teaspoons baking soda
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • 1 teaspoon kosher salt
    • 1/2 cup avocado oil
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 4 overripe bananas, mashed (approx. 2 cups)
    • 1 cup chopped SugarBee Apples coated in 2 tablespoons flour + ¼ teaspoon cinnamon
  • For serving (optional): butter and honey

Instructions:

  1. Prep: Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper or lightly grease it with butter or oil.
  2. Whisk the dry ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Chop the apples: Chop the apples into small pieces, and coat in flour and cinnamon.
  4. Mash the bananas: In a separate medium bowl, peel and mash the bananas until mostly smooth.
  5. Mix the wet ingredients: In a large bowl, whisk together the oil and sugar until well combined. Add the eggs, vanilla extract, and mashed bananas. Mix until smooth.
  6. Combine: Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix. Gently fold in the chopped apples.
  7. Bake: Pour the batter into the prepared loaf pan. Bake for 30 minutes, then cover the loaf with aluminum foil to prevent over-browning. Continue baking for another 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  8. Cool: Let the banana bread cool in the pan for 10–15 minutes before transferring it to a wire rack to cool completely. Slice and top with butter and honey. Enjoy!
