SugarBee® Cookie Dough Apple Sandwiches
There are a few tricks to making healthy cookie dough that really elevate the flavor. Start with drippy cashew butter, which has a neutral taste and acts as a perfect canvas to carry the flavors of any dessert. Adding a touch of almond extract provides that subtle, classic background flavor often found in sugar cookies and holiday treats—just a little goes a long way and gives the dough its magic. Finally, vanilla bean paste or pure vanilla extract brings warm, cozy undertones that are essential for homemade cookie dough. The paste is preferred over extract for a richer flavor, but either should be pure rather than imitation if possible.
Makes: about 6-8 Apple Cookie-Dough Sandwiches
Ingredients:
- 2 SugarBee® Apples
- 1/4 cup superfine almond flour
- 1/3-1/2 cup natural cashew butter (the drippy kind)
- 1-2 scoops vanilla protein powder
- 1/4 teaspoon almond extract
- 1/2 teaspoon vanilla bean paste
- 1/4 cup mini dark chocolate chips
- ¼ cup dark chocolate, melted
- ¼ cup chopped pecans
Instructions:
- Slice apples horizontally about ¼ – ½ inch thick, and remove seeds. Set aside
- In a small bowl, stir together the next 6 ingredients to make the high-protein cookie dough.
- Roll into little cookie dough balls about 2 tablespoons each. Place a cookie dough ball onto one of the apple slices, then press down another apple slice to make a sandwich. Top with a thin layer of melted dark chocolate, letting it drip down the side. Immediately sprinkle some chopped pecans on top. Enjoy!!!!
