This SugarBee® apple Stuffed Pork offers a presentation that is perfect for entertaining, yet easy enough for a typical weeknight dinner. The combination of flavors will make this an instant family favorite.

Ingredients

Scale

2 1/2 – 3 lb boneless pork roast or tenderloin

1 tbsp dijon mustard

1 tsp salt

1/2 tsp black pepper

1/4 cup panko breadcrumbs

1/4 cup chicken stock

2 SugarBee® Apples, chopped

2 tbsp dried cranberries

2 tbsp toasted walnuts, chopped

1 tsp fresh rosemary, chopped

Instructions

Preheat oven to 325º F.

Cut the pork down center lengthwise within a half-inch of bottom. Open the tenderloin so it lies flat.

On each half, make a lengthwise slit down the center to within a half-inch of bottom. Pound to flatten to 1/4-in. thickness. Spread the dijon mustard over the pork and sprinkle with salt and pepper.

In a large bowl, add the breadcrumbs, chicken stock, apples, cranberries, walnuts and rosemary and stir to combine.

Spread the stuffing over the tenderloin, leaving a 1-inch border.

Roll the pork and tie with kitchen string at 2-inch intervals.

Place the pork in a roasting pan and bake, uncovered, for 40 minutes or until pork reaches an internal temperature of 140º F.

Let the pork rest for 8 minutes.

Remove string, slice and serve.
